In the Mac environment, up until now, it has been possible to select color printing or monochrome printing by switching between the virtual printer for color printing and virtual printer for monochrome printing. However, from the March 2023 version of the macOS this is no longer possible.
It is now necessary to specify a virtual printer for color printing (Main_Color) and then select monochrome in the print settings. To print in monochrome, select "モノクロ" in the Presets, as shown in the image below.

Please note that if you select any settings other than "モノクロ", even documents with only black text will be treated as a color printout, and you will be charged for color printing.
